Chia Seed Pudding

I love this pudding I eat it for breakfast, for dessert, or anytime I am hungry. If I want to make it out the door to watch the sun rise on a run but I am really hungry I just eat a spoonful or two and I am good for a few miles. It is also SUPER easy to make.  I can sometimes be found eating out of the jar and double dipping in my own house, yikes busted. This is my version of drinking from the milk carton!

 

Ingredients

1 can full fat organic coconut milk

¼ cup chia seeds

1-tablespoon maple syrup (or to taste)

½ tsp. cinnamon

 

Place all ingredients in pint size mason jar with a lid and shake vigorously then let sit in refrigerator overnight. That easy! Sometimes if the coconut milk separated a lot I stir it with a fork. 

*If you would like chocolate pudding add 2 tablespoons raw coca powder. YUM!

Most recently I have been in love with eating pudding with frozen blueberries, hemp seeds, and pecans! Is is a 'go to" before my long runs because it is easy and helps me avoid the crazy hunger!
